Mango, Cucumber, and Chile Salsa (Jamie Oliver, Food Revolution pg. 272)

Ingredients:

  • 1 ripe mango (Not overly rip though as it will get smushy)
  • 1/2 cucumber
  • 4 sprigs mint
  • 2 scallions
  • 1 red chili
  • extra virgin olive oil
  • 2 limes
  • s&p

Directions:

  1. Remove skin from mango using speed peeler
  2. Slice fruit away from pit, roughly chop
  3. Put in bowl
  4. Peel and chop cucumber, add to bowl
  5. Finely chop mint and scallions
  6. Halve, seed, and finely chop chile
  7. Stir mint, scallions, and chile into bowl
  8. Add enough olive oil to coat everything nicely
  9. Add juices of limes and s&p

Delicious! Serve with pork or other meats.  Although, I like to eat it on it’s own.
