Cut off the ends of the pineapple to get rid of the spikey top and make a flat bottom.
Locate one line of eyes going from top to bottom and align your knife at an angle so you’re not cutting directly behind the eyes, you angle the knife 45 degrees into the center and cut the eyes all the way down with the bottom of your knife.
Repeat this step on all the eyes around the pineapple. This should get you a clean cut with no eyes left behind.
Cut the pineapple in half, length-wise and lay flat on the board.
Cut each half in half, length-wise again.
Angle your knife at the center of these quarters and cut the tip off. This should be the core.
Once the core is removed, cut in half again and then into chunks, horizontally.
